This junmai sake is made with Fukumitsuya’s original yeast, Kazeyo Mizuyo Hitoyo, and has a light and smooth flavour profile. It is very pale lemon in appearance, almost colourless. The delicate nose produces tropical fruit and light floral notes, with a touch of anise and fresh spring water from loamy earth.
This sake is very lithe and delicate on the palate, yet still delivering a mouthful of flavour, spring water, anise, fresh sweet herbs, and very light fruit. It has a long finish showcasing light acidity, anise, and floral elements. You breathe it long after you swallow it. Very well done and an excellent introduction to the Junmai style of sak.
