Kuheiji is a cult brewery from Aichi prefecture spearheading the next generation of toji (brewmasters). Kuheiji’s ‘Desir et Sauvage’ line was brought about to highlight exceptional rice varietals and the resulting Go Mi, the five flavours in Japanese. Such a marked highlighting of rice cannot be achieved without being accompanied by all the other flavors. Because this Yamada Nishiki rice is less polished and involved in fermentations at higher temperatures than average, it brings with it sweetness, umami, acidity, astringency and bitterness.
This is an intense sake with vibrant aromas of ripe citrus fruit, herbs, and fennel. Theres a delicate sweetness balanced by lively acidity and a solid core of citrus/tropical fruit. Quite complex, this is a great companion to pan-seared Wagu beef and sea salt.
